INNOVATION IN FOOD SCIENCE – FOOD PRODUCT DEVELOPMENT

CREATING A NEW FOOD PRODUCT: SIMPLIFIED STEPS
Step 1: Understand Your Market and Pricing
Before diving into food product development, it’s essential to analyze the market, identify your target customers, and decide on the right price for your product.
Step 2: Crafting the Recipe and Nutritional Value
The ingredients you choose for your recipe and how they interact determine the health benefits and nutritional content of your food.
Step 3: Get the Necessary Equipment
You’ll need specific equipment for cooking, packaging, and storing your food.
Step 4: Meeting Allergen Standards and Certifications
Consumers prefer minimally processed foods. To meet this demand, ensure your product is free from unnecessary chemicals and allergens.
Step 5: Testing and Setting a Production Date
Creating initial product samples allows you to perfect taste, texture, and the production process. Setting a production date keeps you on track.
PRODUCT DEVELOPMENT PROCESS
Step 1: Concept Review by Hela Spice Canada
The Hela Spice Canada team, using your product goals, creates initial product samples for your review.
Step 2: Revision and Finalization
Rarely do initial product samples meet all customer desires, so adjustments are made to fine-tune the recipe. Once approved, final costs, specifications, and recipes are determined.
Approval and Documentation
Step 1: Customer Authorization
This step triggers internal Hela steps to finalize the recipe, confirm unit sizes, run tests, and provide a final quotation for the blend.
Step 2: Usage and Process Instructions
Instructions are provided to processors on when and how to use the product for the best results.
Step 3: Nutrition Facts
The finalized nutritional information is provided for creating the Nutrition Facts Panel on the product packaging.
Step 4: Ingredient List
The Hela Regulatory Team ensures the ingredient list complies with regulations, including allergen information.
Final Steps
Once all these steps are completed, you can launch your product in the market. Remember that product development is an ongoing process, and you may need to make adjustments based on consumer feedback.
INNOVATION IN FOOD SCIENCE – FOOD PRODUCT DEVELOPMENT
- Business owners want to create the next great product that will fill the shelves of grocers and supermarkets across the country.
- The steps involved in developing, manufacturing, and marketing a new food product are complex and challenging.
- We will break down the entire food product development process, step-by-step. Here’s how we turn your food product idea into reality.
INFORMATION GATHERING, REQUIREMENTS AND TARGETS
1. MARKETING REQUIREMENTS & TARGET PRICING
To successfully launch your food product, you must first determine the positioning of your product, the target market, and the location of sales.
2. PROTEIN MATRIX
A food product’s recipe, nutrient composition, and how they interact with one another determine its nutritional and health benefits.
3. PROCURE NECESSARY EQUIPMENT
The term “food processing equipment” describes the parts and processing devices needed to produce, cook, package and store the food.
4. ALLERGENS, CLAIMS, CLEAN LABEL AND NATURAL CERTIFICATION
Customers want processed meals to be as similar to “kitchen or clean label” foods as they can be. Natural Clean Label Certification
Natural Certification is an in-depth analysis of all the ingredients in a product to ensure that they are minimally processed and free from adulterants, aggressive processing or components that are chemically modified.
5. SAMPLING TIME AND START OF PRODUCTION DATE
The core of developing a new product is making initial product samples to fine tune the taste, texture, manufacturing process and cost.
PRODUCT DEVELOPMENT PROCESS
It’s crucial to start with a product launch date as the time available determines how long the development period can be.
1. HELA SPICE CANADA PRODUCED FOR CONCEPT REVIEW
Given the time frame allowed, the Hela Spice R&D
Team, using product goals provided by the customer, produce initial finished product samples for initial concept review.
These samples are reviewed to ensure that they meet finished product goals.
2. REVISED SAMPLES
- Very rarely do the initial product samples meet all desires of the producing customer, so adjustments to the samples are made to fine tune the recipe.
- Revised product samples are produced and when approved, final costing, specifications and finalized recipes are established.
APPROVAL & DOCUMENTS
1. CUSTOMER AUTHORIZATION TO PROCEED
- Triggers a wave of internal Hela steps to make the product blend a “GO” recipe.
- These steps include finalizing the production recipe, confirming customer required unit sizes, running test runs to ensure the blends allow for complete and consistent blending and packaging.
- A final quotation for the blend is performed at this time reflecting all the ingredients, blending and packaging requirements
2. USAGE AND PROCESS INFORMATION FOR BEST PRODUCT OUTCOME
- Information is provided to the processor on a blend that includes facts on when to add the blend, how long to mix and possibly cooking instructions to the users of the blend to achieve the best results.
3. NUTRITION FACT TABLES OF FINAL PRODUCT AND BLENDED UNIT
- Hela will also, at this stage, provide Processors with the finalized Nutritional facts for the blend, so that this information can be used to create the final Nutrition Facts Panel on the end product packaging.
4. INGREDIENT LIST FOR FINAL PRODUCT AND BLENDED UNIT
- To ensure validity of the final on-product Ingredient Declaration, the Hela Regulatory Team will provide the customer with a finalized version of the ingredients that go into producing the specific blend.
- Gluten, added sulphites, and food allergens must all be mentioned, barring any exclusions or exemptions.
FINAL THOUGHTS
- After all of the concepts have been tested through various stages, the final step is to present a new product to the market.
- The act of launching a product is not the last step in its development. Quite often tweaks to a recipe are made to address unforeseen reactions by consumers of the final product.
